😷 Survive This Flu Season 🤧 With My “MAGIC HEALING SOUP” 🧙🏻‍♂️ Family 👨‍👩‍👧‍👦 Approved!

The first time I had this soup was in Dubai! I was visiting my brother with Toufic and my mom, and we got both super sick, we had to spend most of our vacation in bed with fever and Toufic was unfortunately taken to the ER 🤭 Thank god everything went back to normal and we were able to enjoy the rest of our vacation.

My brother, (the older one; the younger is totally the opposite) is a big believer in the healing power of food and only food to the body and soul (yeah…) So he cooked us this super soup and we literally had it for lunch and dinner for the next 2 days. Every time we had it, something felt different! We got stronger and our congested noses felt so much better! Since then, every time one of my family members gets sick, MAGIC SOUP to the rescue. It’s extremely easy ( I don’t do complicated recipes) and very beneficial. Honestly I can’t believe I haven’t shared it yet with you mammas! But better late than never! So here it is with all the explanations needed and the benefits of each ingredient (please read the benefits of each ingredient you lazy mamma!)


FRESH HERBS

Choose one, two or all the following herbs: Rosemary  (works as a disinfectant, helps with headaches and fever) , fresh thyme  (for the cough)  and oregano  (for the cough and prevents bronchitis)

THE BOOSTERS (AND WHY?)

Fresh grated turmeric  (Turmeric is the boss when it comes to being an anti inflammatory and immunity booster! Plus, Turmeric is known to relieve pain)  You need to have fresh turmeric in your house if you don’t already! Get them fresh, wash them, dry them and freeze them! PS: Whenever you have turmeric in your dish, you need to add black pepper, they are a perfect  combination  the black pepper will help your body absorb better the nutrients in the turmeric.

Potatoes are an excellent source of vitamin C but were mainly using them here as carbs to fulfill our hungry tummies. Feel free to replace them by sweet potatoes or you can also mix both.

Celery contains loads of vitamin C, what makes it act as a super immunity booster but if you’re not a big fan like my kids, skip this, after all we want them to eat it!

Feel free to add any vegetable, green ones preferably that your kids will like. Mine LOVE corn, he would eat anything that has corn in it!

INGREDIENTS

Read the benefits of each ingredient up you lazy one! 👆🏻

  • Choose one, two or all the following herbs: Rosemary, fresh thyme and fresh oregano. (it’s hard to find fresh oregano, you can use dried one)

  • 1 diced big potato (we’re using potato as a carb to fulfill our hungry tummy)

  • 1/2 celery stick cut into small pieces (very small)

  • 2 diced big onions

  • 2 diced (or crushed) garlic cloves

  • 1 pinch of grated ginger (Skip this if your baby is younger than 9 months, If toddlers will be eating from this soup, use a pinch of grated ginger (depends on how much your children can tolerate it) if the soup is for you, instead of grating the ginger, dice it.

  • 1 Pinch of fresh grated turmeric

  • Black pepper

  • Salt (skip this if a baby is having it)

  • 1 Anis star

  • 1 cup Chicken stock * with or without chicken pieces

  • 1 cup Vegetable stock * (Quantity mentioned in method 👇🏻)

  • 1 tablespoon tomato paste or tomato puree/juice (OPTIONAL)

You can just use water instead of vegetable and chicken stock, but they will enhance the flavor BIG time and are more beneficial. They are super easy to make. Here are basic recipes for Vegetable stock and chicken stock.

PS: Toufic, my son prefers red sauce over white ones so I add 1 tablespoon of organic tomato paste or tomato puree/juice.

METHOD

  1. Add the onions, potatoes, garlic, celery, vegetables of choice 👆🏻, ginger, herbs 👆🏻 and the anise star to a pressure cooker (you can also use any cooking pot if you don’t have a pressure cooker, same nutrition benefits exactly)

  2. Add vegetable stock + Chicken stock until it covers all the ingredients + 2 cm above. Cook on low pressure for 15 min

    **PS: if you’re using a pot instead of pressure cooker, add 4 cm instead of 2cm (because in the pot, you will lost more water) then cook for about 30 min with closed lid.

  3. When everything is cooked, add the salt and the black pepper

    Another PS: Sometimes, I use pasta when the kids feel like pasta instead of potato! I cook it on the side and add it after all the veggies are cooked! Potatoes are more beneficial for sure but you can also replace them with multicereals pasta ♥️
